BATTER FRIED FISH 
2 lb. lean fish fillets
1 1/2 c. flour
1/4 tsp. salt
2 tsp. baking powder
2 eggs
2 c. milk
Flour for dredging
Salt & pepper

Cut fish into 3/4 inch strips. Toss flour in a bowl with salt and baking powder. Make a hollow and put eggs and half the milk in it. Beat until smooth, gradually working in flour from sides. Stir in remaining milk. Heat fat to 370 degrees, dredge fish lightly with flour seasoned with salt and pepper. Dip fish into batter, drain excess, fry until golden. Serve with French fries and tartar sauce. Makes 4 to 6 servings.

Try using cornstarch for the dredging. The batter seems to stick better.
