SAUSAGE AND RICE CASSEROLE 
1 lb. sausage
1/2 c. chopped onion
1/2 c. chopped green pepper
1 c. uncooked rice
2 c. chicken broth

Brown sausage, drain with slotted spoon, transfer to a 2 1/2 quart casserole. Drain all but 3 tablespoons drippings from skillet. If not enough drippings use bacon grease or butter.

Saute onion, peppers, moderate heat, about 5 minutes. Transfer to casserole dish, add rice and broth, stir well, cover snugly. Bake at 350 degrees about 1 1/2 hours. Makes a good side dish with fried chicken.
