HOLIDAY CASSEROLE 
2 pkgs. (9 oz.) frozen artichokes
1 tbsp. lemon juice
4 c. cooked, diced chicken or turkey
1 can sliced drained mushrooms
1/4 c. butter
1/4 c. flour
1/2 tsp. salt
1/2 tsp. leaf thyme
1/4 tsp. nutmeg
2 c. milk
1 chicken bouillon cube
1 1/2 c. shredded Cheddar cheese
1/3 c. bleu cheese

Cook artichokes, drain and place in buttered 2 quart shallow baking dish; sprinkle with lemon juice. Add meat and mushrooms. Melt butter and add flour, salt, thyme and nutmeg using a 2 quart saucepan. Add milk and bouillon cube. Cook over medium heat. Stir constantly until thickened, then cook 2 minutes longer. Add cheeses and cook until cheese is melted. Pour over meat mixture in baking dish and bake at 350 degrees for 30-35 minutes. Makes 6-8 servings. Serve over or with rice or noodles.
