HOMEMADE SAUSAGE 
10 lbs. Boston butt (pork), coarsely ground
4 tbsp. salt
2 tbsp. coarse ground red pepper
2 tbsp. fennel seed

Divide meat in half in 2 large bowls. Add half the salt, pepper and seed to each; mix well. Fry one small patty from each to check taste. Flavor with more of your choice. Great for sausage sandwich and on pizza. Freezes great.
