REFRIED BEANS 
1 lb. pinto beans
1 tbsp. onion, chopped
1 garlic clove (optional)
1 tbsp. salt
1/2 c. bacon drippings
Shredded cheese

Cover beans with water and soak overnight or bring to boil and cook 2 minutes, cover and remove from heat and let stand 1 hour. Add 1 tablespoon onion, garlic clove. Add 1 tablespoon salt.

Mash beans with masher. Heat 1/2 cup bacon drippings in large skillet. Add beans and cook until fat is completely absorbed. Top with shredded cheese just before serving.
