REFRIED BEANS 
1 lb. pinto beans
1/4 lb. salt pork
1 tsp. chili powder
1 clove garlic, finely chopped
1/2 tsp. salt
2 tbsp. shortening
1 c. grated Colby longhorn cheese

Soak beans overnight in water. Pour off water. Cover beans with boiling water. Add salt pork. Cook slowly until tender, about 4 hours. Add water if needed. Add chili powder, garlic and salt. Simmer 30 minutes. Remove all but 1 cup liquid. Mash beans until smooth.

Melt shortening in skillet. Add beans and fry over medium heat, stirring occasionally. To serve place in large bowl and top with grated cheese. 4-6 servings.
