CINNAMON APPLE COFFEE CAKE 
1 egg
1/3 c. sugar
1 c. flour
1 tbsp. baking powder
1/2 tsp. salt
1/2 c. milk
1 c. rolled oats
1/4 c. shortening, melted
2 lg. cooking apples, peeled and sliced

TOPPING:

1/4 c. sugar
1/2 tsp. cinnamon
2 tbsp. melted butter

Beat egg and sugar until creamy. Mix flour, baking powder and salt. Add alternating with milk to egg mixture. Stir in oats and shortening. Spread half the batter in greased 9-inch round pan. Arrange apple slices over batter. Spread remaining batter over apples.

Combine topping ingredients. Sprinkle over batter. Bake at 375 degrees for 25- 30 minutes. Serve hot.
