VIRGINIA'S POTATO CASSEROLE 
2 lb. pkg. frozen hash browns, thawed
1/2 stick butter, melted
2 c. Cheddar cheese, shredded
1 pt. sour cream
1 can cream of chicken soup, undiluted
1/2 onion, chopped (optional)
salt and pepper, to taste
dash hot sauce, to taste

Preheat oven to 350°F. Mix all ingredients (except topping) together. Put in large casserole dish.

Topping:

1 stick melted butter (more, if needed)
2 c. corn flake crumbs, crushed

Mix topping ingredients together and spoon over potato mixture.

Bake at 350°F for 45-55 minutes. Cook until nicely browned.

(Cover if it becomes too brown.) Can be doubled easily.
