TORTELLINI WITH TOMATO SAUCE 
1 lb. tortellini

Boil tortellini in 4 liters of water with 1 teaspoon salt for 12 to 15 minutes.

SAUCE:

3 tbsp. olive oil
1/2 onion, chopped
1 c. strained tomatoes
4 oz. red or white wine
Some chopped parsley
1 clove garlic, chopped
1/2 tsp. basil
4 oz. chicken broth
Salt & pepper
4 tbsp. grated Parmesan cheese

In a saucepan, heat the oil, saute the garlic and onion for a few minutes. Add the rest of the ingredients, except the cheese, simmer for 10 to 15 minutes over a moderate heat, stirring occasionally. Drain the tortellini, toss with the sauce and cheese, serve hot sprinkled with some chili pepper if you prefer Makes 4 servings.
