HOT CHICKEN SALAD 
4 c. chicken, cooked and cut up
2 c. diced celery
1/2 c. diced green pepper
3 tbsp. minced onion
1 sm. jar red pimento
2 c. cooked rice
1 c. slivered almonds
1 c. sm. peas
1 1/4 c. salad dressing
3 tbsp. lemon juice
2 tsp. salt

Mix the first 8 ingredients together. Mix the dressing, lemon juice, and salt and add to the chicken mix. Put in greased 11 x 13 pan then top with 1/2 cup shredded cheddar and 2 cups coarsely broken potato chips. Bake at 350 degrees for 30-40 minutes, or until brown and bubbly.
