COCONUT SPICE FRENCH TOAST 
2 lg. eggs
1/2 c. milk
Dash of salt
1/4 tsp. cinnamon
1/4 tsp. ginger
1 tsp. lemon or orange peel
1/2 c. flaked coconut
4 or 5 slices of bread

Combine milk and eggs in a shallow baking dish. Beat well with fork. Add salt, cinnamon, ginger and peel. Mix thoroughly. Stir in coconut, distributing evenly. Soak bread in mixture and fry in small amount of butter over moderate heat until golden brown. Serve plain or with syrup.
