TOASTED COCONUT-PECAN PIE 
3 eggs, beaten
1 1/2 c. sugar
1/2 c. (4 oz.) butter, melted
2 tsp. lemon juice
1 tsp. vanilla extract
1 (3 1/2 oz.) can flaked coconut
1/2 c. coarsely broken pecans
1 unbaked 9" pie shell

Preheat oven to 350 degrees. Thoroughly combine eggs, sugar, butter, lemon juice and vanilla. Stir in coconut and pecans. Pour into pie shell. Bake in a 350 degree oven for 45 to 50 minutes or until filling is set. Cool. Garnish with sweetened whipped cream and pecan halves, if desired. Serves 6.
