TOASTED COCONUT PIE 
3 eggs, beaten
1 1/2 c. sugar
1/2 c. melted butter
4 tsp. lemon juice
1 tsp. vanilla extract
1/2 tsp. coconut extract
2 c. flaked coconut
Unbaked 9 inch pie shell

Combine eggs, sugar, butter, lemon juice, vanilla extract, and coconut extract. Beat well. Stir in coconut. Pour filling into unbaked pie shell. Sprinkle additional coconut on top, if desired. Bake in preheated 350 degree oven for 40 to 45 minutes.
