FIVE - MINUTE TARRAGON
VINAIGRETTE
 
1/2 c. oil (corn oil or olive oil)
1 tbsp. vinegar (cider or wine vinegar)
1 clove garlic
2 tbsp. dried tarragon
1 tsp. fresh ground pepper

Make this easy dressing at least 1 hour before you will toss your lettuce salad and let it stand; don't refrigerate. You can make it in the morning and just whisk it again before you add it to your salad.

Pour oil and vinegar into measuring cup; whisk to blend. Press garlic clove and add to vinegar and oil; whisk again. Add tarragon and pepper; whisk again. Vary quantities of seasonings to taste.
