FRESH BROCCOLI WITH GINGER VINAIGRETTE | |
2 1/2 c. fresh broccoli flowerets 1/4 tsp. chicken flavored bouillon granules 1 tbsp. boiling water 1 tbsp. minced shallot 1 1/2 tsp. grated fresh gingerroot 3 tbsp. white wine vinegar 1 tbsp. vegetable oil Arrange broccoli flowerets in a vegetable steamer. Place over boiling water; cover and steam 10-15 minutes or until crisp-tender. Remove flowerets to serving dish; set aside. Dissolve chicken bouillon granules in 1 tablespoon boiling water; stir in remaining ingredients. Pour over broccoli. Cover and chill at least 2 hours. Use a slotted spoon to serve. Yield: 4 servings (about 50 calories per 1/2 cup serving.) Protein 1.7; Fat 3.6; Carbohydrate 3.4; Cholesterol 0; Iron 0.5; Sodium 40; Calcium 27. |
