BROCCOLI CHICKEN ROLLS 
2 whole, boneless chicken breasts, halved and flattened
2 slices low-fat cheese
1 pkg. frozen, chopped broccoli, defrosted and drained
1/2 c. skim milk
1 tbsp. all-purpose flour
1 tbsp. white wine (optional)
1 tsp. parsley flakes
1/4 tsp. pepper

Cut 1 cheese slice in quarters. Place 1 piece in each chicken breast. Spoon approximately 2 tablespoons broccoli onto chicken. Roll up and secure with toothpicks. Place rolls, seam side down, in a lightly greased glass casserole. Cover with wax paper. Microwave on high 8 -10 minutes; drain.

Blend remaining ingredients in a 2 cup measuring cup. Microwave on high for 1 1/2 to 3 minutes, stirring half way through. Add remaining cheese. Pour sauce over chicken and cook on high for 1 minute. Serves 4.

Since microwave ovens vary in power, you may need to adjust your cooking time.
