SHRIMP CREOLE (DIABETIC) 
1/4 c. onion, chopped
1/4 c. green pepper, chopped
1 garlic clove, minced
2 tbsp. vegetable oil
3 tbsp. flour
2 1/2 c. frozen shrimp
1 tsp. chili powder
1 tsp. salt
Dash of pepper
2 c. canned tomatoes (1 - 16 oz. can)
2 c. cooked rice

Saute onion, green pepper and garlic in oil until tender. Blend in flour and seasonings. Add tomatoes and cook until thick, stirring constantly. Simmer for 20 minutes. Add shrimp. Heat through. Serve over hot rice.
