CREOLE SHRIMP 
2 lbs. uncooked shrimp
3 tbsp. shortening
2 stalks celery, chopped
1 sm. green pepper
1 sm. onion
Dash cayenne
1 can tomato sauce
1/4 c. water
2 c. cooked rice
4 tbsp. grated cheese
1 sm. garlic clove
1/2 tsp. basil

Serve shrimp, onion, celery, garlic, salt, pepper, cayenne and shortening for about 10 minutes. Add tomato sauce, simmer slowly. Add water and spices and cook 5 minutes longer. Pour shrimp and 1/2 sauce into a dish. Add cooked rice to remaining sauce and shrimp. Sprinkle grated cheese.
