8 tbsp. shortening 1 c. water 1 c. sifted flour 5 eggs fat (for frying) granulated sugar (as needed) Boil together the water and shortening. When briskly boiling, add the flour, stirring thoroughly, until mixture separates from the sides of the pan. Remove from heat and cool. Add eggs one by one, beating well after each addition. Heat enough oil in a deep frying pan. When fat is hot enough, drop flour and egg mixture by spoonful and fry until golden brown. Drain on paper towel and roll in granulated sugar, if desired. |
