OATMEAL - DATE CAKE 
1 1/2 c. boiling water
1 c. oatmeal
3/4 tsp. salt
1 c. chopped dates
3/4 c. brown sugar
3/4 c. white sugar
1/2 c. shortening or oil
2 eggs
1 1/2 c. flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 c. chopped nuts

Place dates, salt, and oatmeal in separate bowl. Pour boiling water over them; let stand 20 minutes. Cream shortening and sugars; add eggs and beat well. Add dry ingredients to this mixture. Add oatmeal/date mixture; blend. Stir nuts in by hand.

Bake at 325 degrees for 35-40 minutes. Top hot cake with broiled frosting.

FROSTING:

3/4 c. brown sugar
1/3 c. butter, melted
1/4 c. cream or milk
1 c. coconut
1/2 c. chopped nuts

Heat butter and milk together; stir in brown sugar. Add coconut and nuts; spread over hot cake and place under broiler until brown. Do not burn.
