ITALIAN CREAM PUFFS 
Water
1 stick butter
1 c. flour
4 eggs
1 lb. Ricotta
1/2 c. sugar
1 tsp. vanilla
Mini chocolate chips

Boil 1 cup water with 1 stick butter until melted. Take off heat and add 1 cup flour. Mix with spoon until it forms a ball. Add 4 eggs, one at a time, beating with spoon after each until smooth. Drop by full teaspoons on ungreased cookie sheet and bake at 400 degrees for 20 minutes until golden. Remove. Cool. Slit in half.

Filling: Beat 1 pound Ricotta with 1/2 cup sugar. Add 1 teaspoon vanilla and chocolate chips. Fill puffs and dust with confectioners' sugar.
