BAKED EGG CUSTARD 
2 c. scalded whole milk
2 whole eggs
2 egg yolks
1/2 c. sugar
1/8 tsp. salt
1 tsp. vanilla
Cinnamon or nutmeg (optional)

Scald milk. Mix sugar, eggs, salt, and flavoring. Mix well by stirring - DO NOT BEAT. Gradually add scalded milk to egg mixture and mix well. Strain to remove any egg or milk solids, then pour into custard cups set in a pan of hot water. Bake at 300 degrees for approximately 30 minutes or until set. Custard is done when knife inserted in center comes out clean. Serve chilled or warm.
