FILLET OF SOLE SCAMPI 
1/8 lb. butter (4 tbsp.)
4 cloves garlic
1/2 tsp. chopped parsley
Salt and pepper, to taste
Lemon juice
Lemon rind
4 fish fillets, any kind

Melt butter and parsley and crushed garlic cloves. Simmer for a few minutes. Don't burn. Add 2 teaspoons lemon juice, salt, and pepper fillets to taste.

Place in baking pan; pour mixture over fillets. Place lemon rind on top of fillets. Bake at 400 degrees for 15-20 minutes, depending on size of fillets. Broil 10 minutes.
