RHUBARB DESSERT 
2 c. water
1/2 c. sugar
2 tbsp. quick cooking tapioca
4 c. rhubarb
1 pkg. strawberry gelatin

In large saucepan, combine water, sugar, and tapioca. Cook over moderate heat until thickened. Add rhubarb; cook until soft. Add gelatin and stir until dissolved. Pour into serving dish and chill until set.
