SWEET PEPPER RELISH | |
6 sweet red peppers or 3 red and 3 green 3 med. onions 1 1/2 tsp. mustard seed 1 tbsp. salt 3/4 c. sugar 1 c. vinegar 1/4 c. water Wash peppers. Remove core and seeds and cut in large pieces. Peel and cut onions into large pieces. Grind peppers, draining juice. Put in pan. Grind onion and add to peppers. Add rest of ingredients. Boil gently 20-30 minutes. Put into sterilized jars and seal. Meanwhile, combine vinegar, sugar, seeds, turmeric and pimento in kettle. Put vegetables in colander and rinse with cold water. Bring vinegar mixture to a boil and stir well. Add vegetables, stir and bring to full rolling boil. Remove from heat and ladle into jars. Yield: About 3 pints. |
