SQUIRREL JAMBALAYA | |
1 squirrel Salt and pepper to taste 3 tbsp. cooking oil 2 lg. onions, chopped 3 stalks celery, chopped 1 clove garlic, chopped 4 tbsp. parsley flakes Cut squirrel into serving size pieces; season to taste. Fry in oil, in heavy skillet, until brown on all sides. Remove from skillet. Saute onions, celery, garlic, and parsley flakes in pan drippings until wilted. Return squirrel to skillet. Cover; cook over low heat until meat is tender, adding small amount of water as necessary. |
