GRANDMOTHER'S BAKED BEANS | |
2 c. dry beans 1/2 lb. side pork or ham slices 3/4 tsp. salt 1 tbsp. dry mustard 1 sm. onion 3/4 c. sugar 1 tbsp. molasses Soak beans a few hours or overnight. Cook in cold water enough to cover. Cook until partially done or skin cracks. Drain water and SAVE it. Then put in half the beans. Then put some pieces of your side pork or ham slices that have been cut into 1-inch squares, then the rest of the beans and the rest of the meat on top. Mix the remaining ingredients with the water and pour over the beans until nicely covered. If you do not have enough water, add HOT water to cover. NEVER ADD COLD WATER. Bake in a slow oven (325 degrees) several hours. |
