ITALIAN RAVIOLI ALLA MILANESE 
DOUGH:

1 lb. flour
2 eggs
Enough hot water to make a stiff dough.

FILLING:

1 lb. cooked mixed meat ground very fine*
1 onion, chopped
2-3 cloves garlic, minced (optional)
3 tbsp. grated Parmesan or Romano cheese
1 egg
1/2 cup bread crumbs soaked in milk
1-2 tbsp. minced fresh parsley, baby spinach or chard
salt, pepper, spices (such as grated fresh nutmeg)
(if desired a little freshly squeezed garlic juice)

*For meat suggestions: veal, beef, pork, salami, prosciutto, sausage, lobster, etc.

METHOD:

Sauté the mixed meat with chopped onion, finely minced garlic.

Mix all the ingredients of the filling. making a paste. Taste and adjust seasonings.

NOTE: If desired, the meat of the filling can be replaced by 1 lb. of cooked baby spinach and adding more grated cheese or Ricotta cheese. After boiling the Ravioli for 15 minutes, drain water and serve with tomato sauce, butter and grated cheese.
