BSF COVENANT CHILI | |
1/2 lb. pinto beans 1 green pepper, chopped 3 to 4 med. onions, chopped 2 c. celery, chopped 2 cloves garlic, crushed 3/4 c. parsley, minced 3 lbs. ground beef 1 lb. ground pork 2 (28 oz.) cans Italian style tomatoes, pureed 1 (6 oz.) can tomato paste Chili powder, salt, pepper, accent Wash beans and remove bad ones. Cover with water and soak overnight. Cover and simmer beans in same water until tender (2 1/2 to 3 hours). Reserve liquid for chili. Saute green pepper, onions, celery and garlic until tender. Brown beef and pork. Combine all ingredients including beans and their liquid. Bring to high heat and add seasonings to taste. Turn down heat, cover and simmer 1 hour. Uncover and simmer for 30 minutes more. Serve with sour cream, grated cheese, chopped green onions. The flavor will improve overnight. |
