FRUITY MUFFINS 
1 c. flour
1/2 c. quick oats
1 tsp. baking powder
1 tsp. cinnamon
1/4 tsp. salt
1 lg. egg
3/4 c. packed dark brown sugar
1/4 c. butter, melted
1 tsp. vanilla
3/4 c. diced apple
3/4 c. fresh or frozen cranberries
1/4 c. raisins
1/2 c. chopped walnuts

Preheat oven to 350 degrees. Grease muffin cups. Mix flour, oats, baking powder, cinnamon and salt in large bowl. Beat sugar and eggs until smooth, stir in butter and vanilla. Stir in apple, cranberries, raisins and nuts, fold in dry ingredients until moistened. Spoon batter in muffin tin. Bake 20 to 25 minutes or until lightly browned and firm to the touch.
