EVELYN'S VEGETABLES IN LIGHT RED
SAUCE
 
1/2 lb. sm. pieces diced ham
2 med. onions, chopped fine
4 toes garlic
1/2 bell pepper, chopped fine
1 tsp. oil
4 shallots

Place above ingredients in pot and simmer approximately 10 minutes.

4 carrots, sliced
4 stalks celery, sliced
3 potatoes, diced
1 bunch broccoli, cut in florets
3 yellow squash, sliced
3 zucchini, sliced

Add above ingredients to meat and seasoning - stir - then add:

1 can whole tomatoes
1 can Contadina Italian seasoned tomato paste
1 can chicken broth

If desired, add Mrs. Dash seasoning, Tony Chachere' and 1/2 teaspoon salt. Let cook over low heat until vegetables are tender. Serve over spaghetti. Low in calories.
