SPANISH RICE 
1/2 c. onion, chopped fine
1/2 c. celery
1 clove garlic
1 tsp. cumin powder
1 (8 oz.) can tomato sauce
1 c. water
1 c. long grain rice
1 tbsp. vegetable oil
1 tsp. salt

Combine onion and celery in pan and simmer in oil until soft and tender. Add rice, stirring frequently until rice is slightly brown. Add water, sauce, salt, cumin powder and garlic. Stir well. Cover and let simmer for 20-30 minutes. 8 servings.
