CRACKER PIE
12 saltines, crushed to 3/4 c.
1 tsp. baking powder
1 c. walnuts or pecans, chopped fine
1 c. sugar
1 tsp. vanilla
3 egg whites

Butter a 10-inch pie plate. In small bowl, combine crackers, baking powder, and nuts.

In a large bowl, beat egg whites, adding sugar, 1/4 cup at a time. Then beat in vanilla. Gently stir in cracker mixture and spread in prepared pan, echoing shape of pan. Bake at 350 degrees for 30 minutes. Cool on rack. It will crack, no matter!

When cool, whip 1 cup cream stiff with a touch of vanilla. Spread in center of pie. Sprinkle on jimmys or shaved chocolate. Strawberry may be folded in, in season. (Cool Whip may be used in place of whipped cream.)
