CRACKER PIE 
3 egg whites
1/4 tsp. cream of tartar
1 c. sugar (or less)
16 saltine crackers
1 tsp. vanilla
Whipped cream
Pineapple preserves
1/4 c. coconut
1 c. pecans or walnuts

Grease 8 or 9 inch pie plate. Beat egg whites until foamy; add cream of tartar, beat until stiff. Add sugar slowly. Crumble crackers. Add crackers, pecans and vanilla to egg mixture; mix. Bake at 350 degrees for 30 minutes. Cool. Fold whipped cream and preserves. Spread on top. Sprinkle coconut on top of this.
