GOULASH SOUP 
3 med. onions, chopped
1 1/2 lbs. beef chuck, cut in 1/2 inch cubes
1/2 tsp. caraway seed
1/2 tsp. grated lemon rind
Salt to taste
1 green pepper, chopped
2 tbsp. butter
2 tbsp. good quality paprika
1 garlic clove, crushed
4 c. beef bouillon
2 med. potatoes, peeled and cut into 1/2 inch cubes
1 red pepper, chopped

Cook the onion in the butter until golden. Add the beef and paprika and stir constantly until browned. Add caraway seed, garlic, lemon rind, salt and bouillon. Simmer, covered, for 1 1/2 hours. Add potatoes and peppers and cook 30 minutes longer. Serve 4-6.
