CRABMEAT, CELERY & APPLE SALAD 
4 tsp. lemon juice
1 tsp. salt
1 1/2 c. diced, pared, tart apples
2 c. canned crabmeat
Lettuce
1 c. diced celery
3 shelled, hard boiled eggs
1/4 c. mayonnaise
1 lg. tomato, cut up
Stuffed olives & green pepper (optional)

Combine the lemon juice and salt. Pour over diced apple to keep from turning brown. Mix crabmeat, celery and apple. Add the coarsely chopped eggs and tomato. Stir in mayonnaise. Serve on individual beds of lettuce garnished with stuffed olives and green pepper strips, or shred lettuce, chop up green pepper and serve in a bowl.
