BAKED SOLE WITH MUSHROOMS 
1 onion, chopped fine
1/4 c. parsley, fresh chopped
1/4 lb. mushrooms, chopped
1/4 c. butter
1 1/2 lb. sole
1 tbsp. flour
1/2 c. light cream
1/4 c. white wine
Salt and pepper

Saute onion, parsley and mushrooms in 3 tbsp. butter.

Place fish fillets into a lightly greased baking pan. Sprinkle with salt and pepper. Bake uncovered at 350 degrees for 15 minutes. Drain liquid and reserve for sauce.

In a small pan, melt remaining butter with 1 tbsp. flour. Add 1/2 cup light cream and cook until thickened, stir frequently. Add reserved liquid and white wine. Cook until heated. Pour over fish. Sprinkle fish with paprika and parsley. Bake for 5 minutes more or until fish flakes easily.
