RICE DISH 
1/2 c. (heaping) raw rice
1 1/2 c. water
1/2 tsp. salt
1 qt. milk
3/4 c. sugar
3 tbsp. cornstarch
4 egg yolks
1 tbsp. butter
1 tsp. vanilla
8 tbsp. sugar
4 egg whites

Cook rice, water and salt in covered saucepan for 15 minutes. Warm milk slightly. Add sugar (3/4 cup) and cornstarch and beaten egg yolks. Bring slowly to boil to thicken. Add butter and vanilla. Mix with rice and put in 2 1/2 quart buttered baking dish. Beat the egg whites, adding the 8 tablespoons of sugar and spread on top of rice mixture. Place in 350 degree oven for 15 minutes until light brown.
