POTATO LATKES 
5 lbs. potatoes, peeled
1 lb. onions (1 lg. and 1/2)
4 eggs
1/2 c. flour
1/2 c. matzo meal
Salt and pepper to taste
Oil, for frying in 1/2 inch of oil
2 tsp. lemon juice

Grate potatoes and drain well. Add 2 teaspoons lemon juice to potatoes. Grate onions. Add to potatoes. Add beaten eggs, flour and matzo meal. Mix well. Drop into pan by teaspoon in hot oil. Serve with sour cream or apple sauce. Can freeze after cooked. Serves 6 to 8 people.
