SPICE MUFFINS 
2 c. all-purpose flour
1 tsp. ginger
1 tsp. nutmeg
1 tsp. cinnamon
3 tsp. baking powder
1 tsp. salt
1 egg, well beaten
1/2 c. sugar
1/4 c. melted shortening
1 c. milk

Sift flour. Measure, and sift flour with spices, baking powder, and salt. Combine egg, sugar, shortening, and milk. Add dry ingredients. Beat only until smooth. Fill greased muffin tins 2/3 full. Bake in hot oven (425 degrees) 15- 20 minutes. Yield 12 muffins.
