HERBED RED POTATO SALAD 
2 lbs. sm. red potatoes
1/4 c. red onion, finely chopped
1/4 c. fresh parsley, finely chopped
1/4 c. fresh chives, finely chopped
1 tbsp. dill, finely chopped
Low-cal sour cream dressing

Boil potatoes in water in large saucepan until tender. Drain. Dice potatoes and place in large bowl. Add onions, parsley, chives and dill. Pour dressing over and gently toss to combine. Chill several hours.

DRESSING:

3/4 c. low-fat cottage cheese
1/4 c. buttermilk
1 tbsp. balsamic vinegar
1 tsp. instant vegetable bouillon granules
1 1/2 tsp. lemon juice

Combine dressing ingredients in blender. Blend until smooth. Serves 6. 80 calories per serving and just a trace of fat.
