HERBED RED POTATOES 
10 oz. sm. red potatoes (about 6)
1 tbsp. extra virgin olive oil
1/4 tsp. grated lemon zest
1/4 tsp. salt
1/4 tsp. freshly ground pepper
1 tbsp. minced fresh mint
1 tsp. minced fresh parsley

Heat oven to 350 degrees. Scrub potatoes; slice 1/4 inch thick. Combine potatoes with oil, lemon zest, salt, and pepper. Divide potatoes between 2 pieces of aluminum foil. Fold foil to make air- tight packages. Bake until tender, about 20 minutes. Sprinkle potatoes with herbs and quickly toss. Serve hot. Serves 2 (195 calories per serving).
