EASY POTATO SOUP 
1 sm. onion, chopped
4 med. potatoes, diced
1 c. shredded carrots or sliced celery
1 c. water
2 c. milk
3/4 tsp. salt
Dash of pepper
1 or 2 tbsp. butter

Boil onion, potatoes and carrots in water for 15 minutes or until potatoes are tender. Stir in milk, salt and pepper. Heat until hot but do not boil. Makes 4 servings. (I usually double the recipe and add a couple of dashes of Natures Seasonings. Very delicious!)

I used red potatoes, needed alot more water than called for. I also used chicken broth with the water for flavor. I suggest whisking in flour to the milk or the soup I very runny. I also added sharp cheddar cheese, green onion and sour cream... Soooo good!!!

It was a nice recipe to start off with! I gave it a boost by adding broccoli, flour to thicken, corn, bacon & dried chopped onions. SUPER yummy! Later while it was thickening I added shredded mozzarella cheese.

I added water for boiling veggies, then drained some before adding the milk. Its very good, I just didn't know how I was supposed to get the potatoes tender in 1 cup water. :-)

Very good soup.. Add a little bacon drippings while at a simmer and top with some bits of bacon on top when its ready to serve... Yum!

This was very good. I diced baby carrots and also mixed up 2 tablespoons of self rising flour and 1/2 cup water and added it a little along untill it thickend to the cosistency I wanted. Served with cornbread. YUMMMM

It was very good but all the milk was overwhelming a little bit. Next time I'm definitely going to cut back on the milk. If you add parsley right on top it makes it taste a lot better :)

I used carrots and celery also. Then I put about 3/4 of the soup in a blender. It made a wonderful creamy texure with a little chunky-ness from the remaining potatoes and veggies. Just before serving, I stirred in fresh parsley and the soup was delicious AND beautiful.

I minced my celery when I made. If the celery size is too big its tastes takes up too much of the soup. If you mince it it has a better balance of flavor.

As I was getting over the flu, my hubby made me this and added a little zucchini, then topped it with a tiny bit of cheese after he put it in bowl. It was the best thing I ever ate, and is still my favorite potato soup.
