EASY EUROPEAN POTATO SOUP 
4 medium potatoes
1 chopped onion
2 tablespoons oil
1 tablespoon butter
2 tsp. dry parsley flakes
2 chicken boullion cubes
2 tablespoons tomato paste
2 cups small pasta (any shape)
8 cups water
pepper, to taste
2 to 4 Italian sausages (if desired)

Chop onion and sauté in oil and butter. If you are using the sausages, add them now and brown slightly on both sides. Cut potatoes into small cubes and add to pot, continue to sauté for about 2 minutes.

Add water, bouillon cubes, tomato paste, parsley flakes, pepper and extra salt, if needed, and bring to a boil. Stir well.

Cover pot, turn heat to medium-low and simmer for 40 minutes. With sausages, simmer at least an hour or until sausages are fully cooked. Add pasta during the last 1/2 hour of cooking.

Serve hot and sprinkle top with grated Parmesan cheese, if desired.

The recipe was fun to make, but the overall outcome wasn't very soup-like. I used star-shaped pastini, and they absorbed almost all the liquid. I suggest using only 1 cup of small pasta, and avoid pastini. Next time I will try to use the noodles used in ministrone.

Loved this but I used 5 tsp. of chicken bouillon, 1 tsp. red pepper flakes, garlic and canned diced tomatoes instead of paste. I also used one cooked and diced chicken breast instead of smoked sausage. It was great.
