MEATLOAF OLE 
2 lbs. ground beef
1 c. fresh bread crumbs
2 eggs
1 (4 oz.) bottle taco sauce
1 med. onion
1 clove garlic
1 1/2 tsp. salt
1 1/4 tsp. pepper
1 tbsp. chili powder

FILLING:

16 oz. heated refried beans
1 (4 oz.) can sliced chili peppers
1/4 lb. shredded Cheddar cheese

TOPPING:

1 c. crushed tortilla chips

Combine first ingredients. Roll out into a rectangle 1/4 to 1/2 inch thick. Top with beans and chilies and cheese. Fold in half or roll up. Place in pan and bake for 1 hour at 375 degrees. Serve on bed of lettuce and to with sour cream.
