ESCAROLE SOUP 
1 stewing chicken
4 stalks celery
4 carrots
1 bunch of escarole
2 onions
Salt and pepper
Parsley
Soup noodles
Ground beef
1 tsp. salt
1 tsp. pepper
1 tsp. parsley
2 tbsp. locatelli cheese

Boil chicken, celery, carrots, onions, salt, pepper, and parsley for 1 hour. Remove bones. Pull apart escarole and cut off ends. Wash well. Add to soup and cook for 15 minutes. Make meatballs with last 5 ingredients. Add to soup and cook for 30-45 minutes. Add noodles according to package directions.
