TAHINI 
At Mt. hope, buy paste (do not buy prepared tahini)

1 c. tahini paste
2 c. water (added very slowly, a little at a time until smooth and liquid)
Salt to taste
A little cumin to taste
1-2 cloves fresh garlic, pressed
A lot of fresh squeezed lemon juice (2 lemons)
Fresh parsley (1/3 of a head, get rid of stems and chop leaves very fine)

Chill before serving until like butter or add enough water to be like the thickness of sour cream.
