4 English muffins 1/4 lb. Mozzarella or Monterey Jack cheese 1 (8 oz.) can tomato sauce 1/2 tsp. basil 1/2 tsp. oregano 16 slices salami or pepperoni (you can substitute another topping if you don't like this) Grated Parmesan cheese (as much as you like) Preheat oven to 400 degrees. Carefully split open the English muffins and put them on a cookie sheet so that they don't touch each other. Open tomato sauce and put into a small bowl. Add the basil and oregano and stir. Grate the Mozzarella or Monterey Jack cheese. Spread 1-2 tablespoons of the tomato mixture evenly on each of the muffin halves. Put 2 pieces of salami or pepperoni (or other topping) on each. Sprinkle the Mozzarella cheese on all 8. Sprinkle some Parmesan on each. Bake in a 400 degree oven until cheese melts - takes 15-20 minutes. Let cool before eating. Ummm good! Serves 4. |
