DAN'S COLD SOUP (LIQUID SALAD) 
1 lg. cucumber
1 green pepper
2 tomatoes
Juice of 1/2 lemon
1/4 c. Spanish onion, chopped
1 clove garlic, pressed
1/2 tsp. salt
Generous grind black pepper
1 tbsp. chopped parsley
Cayenne pepper or Tabasco (optional or to taste)
2 1/2 c. tomato juice
1 (13 3/4 oz.) can beef broth

Chop coarsely, the half cucumber, half of pepper and 1 tomato; blend at high speed in blender. Add remaining ingredients except juice and broth and blend at low speed a few seconds. Stir in juice and broth and chill well. Chop remaining half cucumber, half pepper and tomato and add at serving time.
