GREAT PUMPKIN COOKIES 
4 c. unsifted flour
2 c. quick oats, uncooked
2 tsp. baking soda
2 tsp. ground cinnamon
1 tsp. salt
1 1/2 c. soft butter
2 c. firmly packed brown sugar
1 c. granulated sugar
1 egg
1 tsp. vanilla
1 (16 oz.) can pumpkin
1 c. semi-sweet chocolate morsels

Combine flour, oats, soda, cinnamon and salt; set aside. Cream butter and gradually add sugar, beating until light and fluffy. Add egg and vanilla. Alternate additions of dry ingredients and pumpkin. Drop on ungreased pan 3 inches apart, 10-12 minutes at 350 degrees.
